The Evolution of Freezer Spacers
Presently, the most common method of preserving food is freezing. A variety of different types of products can be frozen, such as yogurt, ice cream and butter, along with meat products such as pork products, chicken products and beef products.
Many years ago most pallets were palletized in a spread stack or chimney stack pattern to increase airflow through the pallet. Although an improvement over a block stacked load, product still wasn't freezing or cooling fast enough. Many companies experimented with different configurations of layers. Freezing in a 5 TIE layer then restacking to a 6 TIE layer for shipping.
The addition of a wood spacer or divider further imporved the operation by allowing cold air to not only flow around the boxes but also between the layers, dissipating heat quickly. This rapid freezing improved the quality of the product eliminating freezer burn and ice crystallization.
Today most palletized loads that are blast frozen use one of four types of plastic freezer spacers. Egg crate design, Maxi design, Heavy Duty Lattice design and Open Profile design.
As an alternative to the use of wooden freezer spacers the industry has turned to the use of cleanable, stackable, reusable, recyclable plastic freezer spacers. The "heavy duty lattice" spacer molded of structural foam plastic is the most rugged and sturdy of all the designs; best used with product that is wet, bloody or with boxes that tend to deform.
